6 oz Self Raising Flour (sifted)
6 oz Caster Sugar
6 oz Butter
3 Eggs (beaten)
1 tsp Vanilla Essence ( I always choose one with seeds in as it tastes more natural)
Small punnet of fresh Blueberries
A little icing sugar for the top and some extra flour for the blueberries
Directions
- Beat the butter and sugar together and mix in the eggs
- Add the vanilla Essence and beat all together
- Fold in the flour
- Place the blueberries in a bowl and sprinkle a little flour on them and turn them in the flour until they are all covered- this will prevent the blueberries from sinking to the bottom of the cakes
- Gently mix in the blueberries.Spoon into your muffin cases
- Place in your cupcake cases and bake in the oven (at 180 degrees) for 20 minutes turning half way.
- Take out and let cool for a few minutes
- Sprinkle with icing sugar
Serve warm for the best results.
