Here is a slow cooker recipe that packs a wonderful pulled pork flavour yet keeps it very keto friendly. Of course normal pulled pork is full of flavour yet packed with high carb, high sugar BBQ sauce.

Prepare, leave to cook in the slow cooker, then pull and serve. Naturally the pork is of course carb free but the trick here is to create a nice sugar free, non processed BBQ style sauce to cook it with.

It goes well with many low carb sides. I love it with broccoli and cauliflower cheese, or wrapped in sour cream and egg wraps.

Ingredients

  • 1.5 kg shoulder of pork

  • 1 tbsp tomato paste

  • 1 tsp cumin

  • 1 tsp paprika

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic powder

  • 60 ml apple cider vinegar

  • 1 tbsp cocoa powder (min 85%)

  • olive oil

Directions

  • Combine all the ingredients to make a paste.
  • Spread the paste all over the pork.
  • Place the pork now into a slow cooker, fat side up. You may feel the urge to put water in or extra sauce but as it starts to cook, a lovely sauce will appear from the meat and all.
  • Cook in the slow cooker for 8 to 10 hours on a low setting or 7 to 8 hours on a medium setting.
  • Once cooked you can shred the pork using two forks. It will shred and pull lovely.

Notes

  • For a more smokey flavour you can add smoked paprika.
  • For more heat you can add chilli or cayenne pepper
