The number one condiment I use on my Keto Diet is mayonnaise. This homemade recipe is so quick and inexpensive. In fact it uses only 5 ingredients of which you may just have them all in your cupboards already.

You don’t have to be on keto to enjoy using this recipe. Mayonnaise homemade like this is great for all who enjoy it.

The beauty of making this at home is not only that it is a quick recipe, but also that you know exactly what is in it (no additives) and you can adapt it to your own tastes. I have added some ideas below the basic recipe itself.

And when I say it is a 5 minute recipe, once you have done it a few times you will find it only takes about 2 minutes,

Is Mayonnaise Keto friendly?

Yes it is, very much so! Mayonnaise done this way has only a tiny trace of carbs per serving, no sugar and plenty good fats.

Is Store Bought Mayonnaise Keto Friendly?

In the main, yes but you have to be really careful and do your label checking.

Full fat original Hellmann’s is good, natural and low carb and so is the copy version at Aldi. Those are the 2 that I would use myself. Remember the ‘light or low fat’ versions tend to put extra carbs and sugars in to compensate.

Be very careful of other brands and always check the labels. Remember, some manufacturers use carbs and sugars in there to make you taste it better, and to keep you wanting it.

Anyway, today we are making our own inexpensive version.

The Recipe

Equipment you will need:

A hand blender

A tall narrow bowl or big beaker/glass. I use a big mug.

Ingredients

  • 1 egg

  • 2 tsp white wine vinegar or lemon juice

  • 1 tsp dijon mustard

  • 230 ml light olive oil or avocado oil

  • 1/4 tsp salt to taste

Directions

  • Place all the ingredients minus the olive oil in the bowl/container.
  • Make sure you lower the hand blender all the way to the bottom.
  • Slowly start adding the oil at the same time as pulsing the mixture. You will see it thicken and emulsify at the bottom so start raising the blender up and down as you pulse and add oil.
  • Once thickened at the top with all the oil added, go up and down through the whole mixture a few times with the blender, making sure it is all emulsified.
  • There you go, all done simple as that.

Notes

  • If you are making for future use you can keep it in the fridge for up to 5 days. Keep it in an airtight container.

Variations

That is the basic mayonnaise recipe but what if you want to add some variations and flavours to it? There are lots of ways to do that.

You can make it a herby mayo by adding the herb of your choice. Maybe oregano, dill, parsley or basil.

Give it some kick with perhaps some chilli powder, curry powder or wasabi.

Or go for it with all kinds of additions and combinations. Maybe put with crushed garlic, tomato or extra lemon juice?
