After a long walk in the outdoors I find I can easily make this dish and feel warm and wholesome in no time.

I find this meal to be very filling itself and you can make it even fuller by adding extra goodness like chopped celery, or different flavourings like oregano.

If you do still need a keto friendly side to serve it over then for me it has to be simple cauliflower rice. Or it goes great with zoodles too made from zucchini/courgette.

For the meat I always keep it very keto friendly by using 20% mince meat/ground beef. But a normal diet or just low carb you can use what you wish.

But here is the speedy version with minimal ingredients that you can make quickly yourselves to start with.

Ingredients

  • 500 g 20% fat beef mince

  • 1 small red onion, diced

  • 1 pepper, diced

  • 2 cloves garlic, minced

  • 400 g diced tomatoes

  • 1 tbsp chilli powder

  • 1 tbsp cumin

  • 1 tsp paprika

  • Salt and pepper, to taste

Directions

  • In a large frying pan, over medium-high heat, brown the beef until cooked through. Drain excess fat.
  • Add the diced onion, bell pepper, and minced garlic to the pan. Sauté until the vegetables are slightly softened.
  • Stir in the diced tomatoes (with their juices), chili powder, cumin, paprika, salt, and pepper.
  • Reduce the heat to low, cover, and simmer for 15-20 minutes to allow the flavors to meld together.
  • Serve hot and garnish with your favorite keto-friendly toppings such as sour cream, shredded cheese, or chopped avocado.

My own favourite topping for this chili con carne is sour cream!
