Our apple tree has produced an abundance of apples this year, probably due to all the good weather we have had over the summer. My go to dish with apples is apple crumble or apple and pear crumble (we have a small pear tree as well). 

After consuming a few of these I was wanting to try something a bit different and I tried a little recipe which looked just up my street! 

It’s a simple apple traybake recipe but very tasty and easy to follow and perfect for me, I get confused if there are a lot of ingredients.

Ingredients

  • 225 g softened butter with extra for the tin

  • 450 g cooking apples

  • Half a juiced lemon

  • 280 g golden caster sugar

  • 4 eggs

  • 2 tsp Almond extract

  • 350 g self-raising flour

  • 2 tsp baking powder

  • ½ tsp cinnamon (optional)

  • Demerara sugar for sprinkling

Directions

  • Pre-heat oven to 180oc/160oc fan/Gas 4.
  • Grease a rectangular baking tin (approx. 27 x 20 cm) with a little of the butter and then line with baking paper.
  • Peel, core and thinly slice the apples and then squeeze over the lemon juice and set to one side.
  • Place the butter, caster sugar, eggs, almond, flour, cinnamon and baking powder into a large bowl and mix until smooth.
  • Put half the mixture into the tin and spread evenly.
  • Arrange apples over the mixture and then repeat the layers (you may only get one extra layer).layer up the fruit
  • Bake for 45-50 minutes until a golden brown colour and springy to touch.
  • Leave to cool for 10 minutes, then turn out of tin and remove the paper. baked almonds
  • Cut into bars or squares to serve.

It’s proved to be a popular recipe as Baldhiker author Janine Moore made it at the same time as me. Enjoy with custard, cream or on it’s own with a good cuppa!
