On a keto or low carb diet these Kale Crisps, or Kale Chips for our American friends, are so easy to make as well as helping to add lots of greens into your diet.

I make a huge batch of them with the intention of making them last a few days but, alas, for me I find myself munching on them all the day I make them, they are so moreish.

For this recipe I have gone to my favourite flavour, Salt & Vinegar. You only need 4 ingredients: kale, salt, vinegar and olive oil.

However you can create your own flavours quite easily. For cheese and onion just use cheese powder and onion powder in place of vinegar and salt. Why not experiment? Lots of herbs can be used to spice up your kale crisps flavours. Paprika, garlic granules, italian seasoning? A good one is a small amount of lime juice with chilli powder for a lovely chilli lime flavour.

Don’t go mad with the seasoning though. As the kale bakes it shrinks and the flavours get more concentrated. Basically no more than 2 tbsp of seasoning per half a kilo of kale.

The type of kale I use and like is curly kale. You could also use other types to suit your taste.

The basic bake is quick and easy. Have fun with your own flavours. But now, onto the salt and vinegar version:

Ingredients

  • 200 g curly kale

  • 1 tbsp olive oil

  • 1/2 tsp white wine vinegar

  • 1/4 tsp salt

Directions

  • Preheat the oven to 150C/300F/Gas Mark 2
  • Remove the thick stems from the kale and tear the leaves into smaller pieces.
  • Put the kale into a large bowl and add the olive oil, white vinegar and salt. Toss together until all the kale is covered.kale tossed in a bowl
  • Cover your baking tray with parchment paper and place a single layer of the kale on it.
  • Place in the oven for 10 to 15 minutes or until the kale turns crispy and starts to brown on the edges. Be careful not to burn them.kale chips on a baking tray
  • That’s it. Leave to cool and enjoy your snack.

Notes

  • Will keep in an airtight container for up to a week.
