An indulgent chocolate cake that’s delicious and fun to bake. The unusual ingredient is the stout or Guinness which adds to the flavour and moisture.

I have enjoyed baking this and I’m planning to make another one in the holiday season to share with friends and family.

The finished look depends on whether you want a classic look with the rich chocolate of the cake paired with a rich creamy frothy top resembling a well poured glass of Guinness, or if you want chocolate flakes on the top. It’s your call.

Ingredients

  • For The Cake
  • 255 g Unsalted butter melted

  • 250 ml Guinness or other brand of stout.

  • 70 g Unsweetened cocoa powder measured before sifting.

  • 386 g Light brown sugar.

  • 142 g Natural yogurt. Greek style yogurt can be used.

  • 2 large free-range eggs.

  • 2 teaspoons vanilla extract or essence.

  • 285 g Plain (all-purpose) flour.

  • 2 1/2 teaspoons baking powder.

  • 1/4 teaspoon salt.

  • For The Icing
  • 340 g cream cheese, room temperature.

  • 170 g Icing sugar. (Powdered sugar.)

  • 1 tsp vanilla extract.

  • 100 g Whipping cream.

Directions

  • For The Cake
  • Preheat your oven to 180°c Gas mark 4 350°F.
  • Grease the bottom of a round baking tin (9.5 inches) and line it with greaseproof paper that’s cut into a circle to fit your tin. Grease the sides, and the middle of the tin and the greaseproof paper or spray it with a non-stick cooking spray. Put it aside.
  • Now melt the butter and add it to a large mixing bowl. Then add the Guinness/Stout, sifted cocoa powder, and the light brown sugar. Whisk until fully blended.
  • In a smaller mixing bowl combine the yogurt, the eggs, and vanilla essence. Whisk together until smooth.
  • Whilst gently whisking the Guinness mixture, slowly pour the egg and yogurt mixture into the larger mixing bowl.
  • Then combine the flour, baking powder and salt. Fold the flour into the egg and Guinness mixture and whisk until it’s blended well together. This mixture will have a batter like consistency.
  • Pour the batter into the greased and lined baking tin. Bake for 45-50 minutes or until a thin skewer or a wooden toothpick comes out of the cake with no stickiness but some moist crumbs are okay.
  • Cool the cake fully before carefully removing it from the cake tin and before icing it.
  • For the cream cheese frosting
  • In a small cold bowl, beat the whipping cream until it forms soft peaks. Put the cream to one side.
  • In a medium mixing bowl, beat the cream cheese, icing sugar, and vanilla essence together until its smooth. Next, add the whipped cream to the cream cheese mixture and beat carefully until it’s combined.
  • Spread the frosting on top of the cake generously so that it resembles the creamy, frothy head of a pint of Guinness.

    Storage 

    Can be stored in the fridge for a few days once iced, or the cake can be frozen without frosting in a freezer proof container for up to a month.  

    Tips

    I find a solid base cake tin works better than a spring form one, I found out through practice, but do remember to fully line and prepare the tin with greaseproof paper, (parchment.)

    This recipe is already becoming a firm favourite in our family. It’s surprisingly moist and tasty without being overly sweet or heavily chocolaty, the Guinness flavour doesn’t overpower the cake either, it just adds to the moisture and balances it out nicely.

    I can recommend giving this cake recipe a try even if you aren’t usually a Guinness drinker. If you’re perhaps thinking it’s too complicated, it will actually surprise you as you take it step by step and you’ll soon have this recipe on your special occasions list just like me.
