In this keto recipe I haven’t gone down the road of making a fancy kind of keto bread or flour alternative to tortillas. To make the shells I use just 1 ingredient: cheddar cheese.

Then, using simple kitchen utensils, you can shape them into a traditional taco shell shape.

In fact, I didn’t have to purchase anything for this recipe as I used my homemade Taco Seasoning too.

Once you add the meat and your choice of toppings, I can assure you that just a couple of these will fill you right up and satiate you.

Of course you can adapt this recipe any way you wish. Use your own choice of fillings or moisten the meat with a bit of tomato paste. These are just a couple of ideas.

Ingredients

  • 500 g grated cheddar cheese

  • 450 g high fat minced beef/ground beef

  • 2 tbsp homemade taco seasoning

  • 1 chopped avocado

  • 2 tbsp sour cream

Directions

  • Preheat the oven to 180C/350F/Gas 4.
  • Line the baking tray with baking paper.
  • Sprinkle 25g flattish piles of the grated cheddar cheese on the tray, keeping the piles a couple of inches apart. If you have room you can make 8 piles, or you can create the shells in 2 lots.piles of cheddar cheese
  • Place the tray in the oven for 5 to 10 minutes, and keep checking them. They are ready when the edges have become crispy and brown and the centres are starting to bubble and turn brown as well.
  • Take out of the oven and let cool for about 2 minutes.the cheese cooked
  • Whilst the flat shells are cooling set up your glasses/mugs with the wooden spoon laid across like this:shaping the cheesy taco shells over a spoon
  • Carefully take the cheese and lay over the spoon or whatever item you have used. This allows each shell to cool and solidify in the traditional taco shell shape we all know. Repeat for all shells.
  • Whilst the shells are hardening you can fry the minced beef/ground beef in the frying pan until browned.
  • Add the taco seasoning and stir in whilst allowing it all to cook together for 5 minutes. (This is where you can optionally add tomato puree and a bit of water).
  • With your shells ready and your meat cooked, spoon the meat into the shells and add your favourite toppings. I used chopped avocado and sour cream, plus you will have grated cheddar left over if you want extra cheesiness.
