This easy keto chocolate lava mug cake is a perfect sweeter treat I have every now and then on my keto diet lifestyle. Plus it doesn’t take long to prepare and cooks in 1 minute in the microwave.
This chocolate, molten centred dessert of course uses no flour as keto friendly, with very low carbs but is also gluten free. There are only a small amount of ingredients, 7, and if you are on a keto diet you will probably have most of them in your cupboard.
This recipe is great to make on a whim, no baking for hours with minimum mess made to clean up.
Straight out of the microwave you can eat direct from the mug you made it in.
Or you can pop it out of the mug easily onto a plate to have with keto friendly whipping cream or ice cream.
Note, although I do have this occasionally as a treat I do not have too often myself. In keto I lose my sweet tooth and never want to get it going again. Plus even though this is low carb it uses half my personal daily allowance of 20g.
Ok, time to start making.
Ingredient tips.
When buying erythritol it normally comes granulated. I use a blender to turn it to a powder so it melts into the batter and cake better (remember we are only cooking this for one minute).
Cocoa Powder and chocolate pieces – To be keto friendly safe, make sure you use chocolate that is at least 85% cocoa and stay well away from sweetened and milk chocolate of course. If this is too bitter for you then just add extra erythritol.
When making the batter in the mug, don’t just throw everything in at once. Follow the order and method below to create a thick batter that will be smoother and cook better.
