This Keto friendly loaded cauliflower mash is full of flavour and cheesy bacony goodness. I use it myself either as a side or as a lunch on its own.

Cauliflower is a perfect vegetable to use in many keto dishes. It can be a rice substitute and it’s far removed from the carb filled starchiness of potatoes. It also pairs well with another keto friendly veg, broccoli.

For instance, I use both in the Broccoli and Cauliflower cheese recipe I’ve shared. I will be sharing how it can be used in desserts soon too.

This dish takes less than half an hour to make and doesn’t require lots of fancy ingredients. It pairs nicely with many main dishes as a lovely side too.

Of course, if you’re not a big cauliflower fan, another keto mash alternative is cabbage mash.

Ingredients

  • 1 large cauliflower head

  • 120 ml sour cream

  • 140 g grated cheddar cheese

  • 2 bacon slices cut into pieces

  • 3 tbsp butter

  • 1/4 tsp garlic powder

  • 2 tbsp chopped chives

  • salt and pepper to taste

Directions

  • Pre heat the oven to 200C/400F/Gas mark 6.
  • Trim the cauliflower and cut into florets.
  • Pre cook your bacon pieces and put to one side.
  • In a pan of water, boil the cauliflower until soft and tender. Drain very well and make sure you dry the cauliflower out as much as possible. I use kitchen paper to squeeze it dry. An alternative is to steam your cauliflower until tender.
  • Now use your favourite mashing method. I like to place it in a blender until it becomes smooth and fluffy.
  • Add the garlic, butter, and the sour cream. Blend or mash all the ingredients together until you have that lovely mash consistency.
  • Place the mash into a bowl and stir in half the cheese, half the bacon and a good portion of the chives. Add salt and pepper to taste.
  • Place everything into your baking dish and top it off with the remaining cheese, bacon and chives.
  • Place in the oven for 15 minutes or until the cheese has browned to your liking.
