Ingredients

  • 1 medium butternut squash

  • 2 tbsp unsalted butter, melted

  • 2 tbsp brown sugar

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • 1/4 tsp salt

  • Freshly ground black pepper, to taste

Directions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Peel the butternut squash and cut it in half lengthwise. Remove the seeds with a spoon and cut into 1-inch cubes.
  • In a large bowl, combine the melted butter, brown sugar, cinnamon, nutmeg, salt, and black pepper. Add the butternut squash cubes and toss until evenly coated.
  • Arrange the coated squash cubes in a single layer on the prepared baking sheet.
  • Roast for 25-35 minutes, or until the squash is fork-tender and caramelized, flipping it halfway through the cooking time.
